I believe in looking at your lifestyle choices and making sense out of them.  I also believe in bringing awareness to our daily nutrition.  I call this Nutritive Awareness.   I believe we must consciously feed nourishment to our bodies in many forms.  Through observation it is rare to see people eat veggies at breakfast.  Through experience, it is a challenging shift to begin loving your veggies at breakfast.

Why should we care about veggies at breakfast?

1.     Veggies jump starts your day with nutrients – much needed vitamins and minerals – it’s a day changer!

2.     Many veggies are packed with proteins and good carbs to give you tons of energy!

3.     Veggies are brain food!

4.     You Get a head start to the many servings of veggies needed in the day for overall wellness.

 Here are a few of my favorite recipes for Veggies at Breakfast!

Veggie Egg Scramble

Ingredients:
Onion (red or sweet)
Tomatoes
Zuccini, or whatever you have in your fridge.
Spinach
Butter
Eggs
Sea Salt and Pepper to taste
Goat or Feta Cheese (optional)

Preparations:  Chop all the veggies accept the Spinach.  Place all but the spinach in a skillet to saute in a bit of butter until they are just soft.  Add in the Spinach and stir to let it wilt a bit.  Just when it seems to be shrinking, add in the amount of mixed eggs your desire and scramble on medium heat.  Sea Salt and Pepper to taste.

Ready to Enjoy!

Sweet Potato Pancakes

Serves: 4

Ingredients:

1  cup Young Living Einkorn Pancake Mix
2 Tbsp Blue Agave or Yakon syrup
1 teaspoons baking powder
¼ Tsp Sea Salt
1 teaspoon cinnamon
½ teaspoon salt
1 ½ cups milk of your choice (I use almond)
1 Tbsp of Coconut Oil or melted butter
½ cup mashed sweet potato
1 egg
1 Tsp vanilla

Preparation:

1. Preheat your oven to 200 F (to keep the pancakes warm as you finish each batch).

2. Whisk together in a large bowl the dry ingredients: Einkorn mix, baking powder, cinnamon, and salt.

3. Whisk together in another bowl the wet ingredients: milk, Agave or Yakon, coconut oil or butter, sweet potatoes, egg, and vanilla.

4. Pour the wet ingredients over the dry ingredients and gently whisk them together until just combined (don’t overmix).

5. Cook pancakes on a hot, buttered griddle or frying pan until the top of the pancakes bubble a bit, then flip and cook until the underside is lightly browned.

6. Keep warm on a foil-lined baking sheet in the warmed oven until all the batter has been used up. Serve with butter and 100% Natural Maple Syrup or eat them plain as they are YUMMY!

Green Smoothie Recipes - My Favorites!!

Protein Power & Veggie Smoothie

2 Scoops of Young Living’s Power Meal Protein Powder or Vanilla Spice Pure Protein
1 Tbsp of Flax Seeds
1 Tbsp Rice Bran
1 Giant Heap of Spinach
½ of Frozen ripe Banana
½ of pealed Lemon

In a nice, strong blender.  (I use a Vita Mix)

Spinach-Pear-Celery Smoothie

2 pears
2 Stalks of celery
2 Cups Spinach
1 ½ cups of water

In a nice, strong blender.  (I use a Vita Mix)
